Nalesnki

1/3 cup Flour
3 Eggs
1 teaspoon Salt
2 Tablespoons Sugar
3/4 cup Milk

Mix the eggs, flour, salt, and sugar throughly. You will end up with a thick sticky batter. Pour in the milk and mix slowly. The final product is a thin runny batter. Put this aside and let it rest for a little bit (five minutes), then check the thickness of the batter.

(if you don't follow the stuff up there exactly you won't get nalesnki)

Get out a medium skillet and turn your burner on to medium heat. Melt a small amount of butter in the pan. This is where it gets a little tricky. This size of you skillet is going to determine how much batter you need for each pancake. The skillet I use takes a little more batter than an 1/8 of a cup. You will probably have to make a test batch the first time and pretty much ruin it to figure out your own amount. Pour the batter into the hot skillet, pick the skillet up and tilt it around so the batter covers the whole bottom of the pan. Set it back down and wait until the top of the pancake looks dry. (Here's where you either really do well, or it all kind of goes tits up.) You need to slide a spatula under the pancake and flip it over. (I can't do this all the time. You will either have a perfect looking pancake or a clumped mess. Don't worry.) Let the bottom side brown just a little bit. It will only take a few seconds. Then transfer it to a plate.

Serving Suggestions:

Ok, those clumped mess pancakes can just be slapped on a plate and eaten with a little bit of maple syrup. Not bad at all!

The perfect looking ones lay one of them out on a plate and spoon some filling into it in a straight line. (fruit topping, sweet cheese, fresh fruit, chocolate, anything your happy little heart desires) Then fold the pancake over the filling, and roll it up into a log. Dust it with powerdered sugar and start stuffing your face.

nope them sounds like good ole fashion english pancakes to me!!!! yummy
p.s i like mine with sugar and lemon juice oh and if youre really clever and have a good non stick pan..... dont use the spatula try flipping them... hell yeah

Even with an awesome nonstick pan (and i've had quite a few in my time) I can't just flip them. Why? Simple....my polish grandmother taught my mother how to do this. This is the exact way mom was taught and this is the exact way I was taught.......to do it any other way will invite the devil into my kitchen and my food will never be correct again. (yes, that was the threat gram passed along to my mother. That one and your husband will starve to death...gotta love the in-laws...)
